Extra Virgin Olive Oil (a favorite of mine) has a smoke point of 320 degrees Fahrenheit. Avocado oil has a smoke point which is 200 degrees higher.....520 degrees Fahrenheit. The Smoke Point of an oil is the temperature at which the oil starts breaking down and can lose its health benefits.
For this reason, I switch from EVOO to Avocado oil when I'm cooking at high temps or am using it outside on the grill.
